Description

A comforting and hearty casserole combining ground beef, creamy sauces, and melted cheese with tender potatoes.

Ingredients

  • 1 ½ lbs ground beef (or ground turkey)
  • 1 medium onion (chopped)
  • 3 cloves garlic (minced)
  • 5–6 medium russet potatoes (thinly sliced, about 1/8 inch)
  • 2 cups shredded cheddar cheese (divided)
  • 1 cup shredded mozzarella (optional, for extra meltiness)
  • 1 10.5 oz can cream of mushroom soup (or cream of chicken)
  • 1 cup milk
  • 1 tsp salt
  • ½ tsp black pepper
  • ½ tsp paprika (optional)
  • 1 tbsp olive oil or butter (for greasing the dish)

Instructions

  1. Preheat oven: Heat your oven to 350°F (175°C). Grease a 9×13-inch baking dish with olive oil or butter.
  2. Cook beef mixture: In a skillet, brown the ground beef and chopped onion until fully cooked. Drain any excess fat. Stir in the minced garlic, salt, pepper, and paprika.
  3. Make sauce: In a bowl, whisk together the cream of mushroom soup and milk until smooth.
  4. Assemble casserole: Start by layering half of the sliced potatoes on the bottom of the greased baking dish. Spread half of the beef mixture over the potatoes, then pour half of the sauce over the beef. Sprinkle with 1 cup of cheddar cheese. Repeat these layers with the remaining potatoes, beef, and sauce. Top with the rest of the cheddar cheese and the mozzarella, if using.
  5. Bake covered: Cover the dish with foil and bake for 45 minutes.
  6. Bake uncovered: Remove the foil and bake for an additional 15–20 minutes, until the potatoes are tender and the cheese is bubbly and golden.
  7. Serve: Let it rest for 5 minutes before serving.

Notes

This casserole pairs well with a green salad or steamed veggies. Slicing the potatoes and cooking the beef mixture ahead of time can save you preparation time.
