Description

A hearty and flavorful Greek-style baked cod and potato casserole. Layers of tender potatoes and flaky cod fillets are baked in a rich tomato and herb sauce.

Ingredients

  • 4 cod fillets (6 oz each)
  • 4 medium potatoes, thinly sliced
  • 1 cup tomato sauce
  • 2 cloves garlic, minced
  • 1 small onion, diced
  • 1 tsp dried oregano
  • 1 tsp dried thyme
  • 1/2 tsp paprika
  • 1/4 cup olive oil
  • Salt and pepper to taste
  • 1/4 cup crumbled feta cheese (optional)
  • 2 tbsp chopped fresh parsley

Instructions

  1. Preheat oven to 375°F (190°C).
  2. Heat olive oil in a pan. Sauté onion and garlic until soft.
  3. Add tomato sauce, oregano, thyme, paprika, salt, and pepper. Simmer for 5 minutes.
  4. Layer half the potatoes in a baking dish. Pour half the sauce over them.
  5. Place cod fillets on top and cover with remaining sauce.
  6. Layer the remaining potatoes over the cod.
  7. Bake for 40-45 minutes until potatoes are tender.
  8. Sprinkle with feta cheese and parsley before serving.

Notes

  • Use firm white fish like haddock if cod is unavailable.
  • Adjust baking time if using thicker potato slices.
  • For extra flavor, add kalamata olives.
