Description

A flavorful one-pan dish packed with protein from chicken, beans, and corn, perfect for busy weeknights or family gatherings.

Ingredients

  • 1 cup basmati rice (uncooked)
  • 1/2 medium yellow onion (finely chopped)
  • 2 garlic cloves (minced)
  • 1 cup chicken broth
  • 1.5 lbs chicken breasts (skinless & boneless, cut into 1-inch cubes)
  • 1 (14 oz) can black beans (rinsed and drained)
  • 1 (12 oz) can corn (drained)
  • 1 (16 oz) jar salsa
  • 1/2 tsp chili powder
  • 1/2 tsp paprika
  • 1/2 tsp black pepper
  • 1 cup cheddar cheese (shredded)

Instructions

  1. Preheat the oven to 360°F and prepare a 9×13 casserole dish.
  2. Cover the bottom of the casserole dish with basmati rice, chopped onion, minced garlic, and chicken broth.
  3. Combine all of the ingredients inside the casserole dish.
  4. Add the chicken, black beans, corn, salsa, chili powder, paprika, and black pepper. Stir slightly to combine, but keep the rice at the bottom of the casserole dish as much as possible.
  5. Level all the casserole ingredients out and sprinkle with shredded cheddar cheese.
  6. Cover with foil and bake for 45 minutes. Then remove the foil and bake for another 10 minutes uncovered until the cheese melts.

Notes

Serve warm with toppings like avocado, cilantro, or sour cream. Pairs well with a simple side salad or tortilla chips.
